A simple and tasty recipe that I learned from a friend. Perfect as Hanukkah latkes or just as a great dinner. For Passover, the white flour can be replaced with matzo flour.
2 large sweet potatoes
2 tbsp flour or matzo flour
2 tbsp Kinneret Farm silan
1 tsp cinnamon
Oil for frying
- Peel the sweet potatoes and grate using a coarse grater.
- Mix the grated sweet potato with all the rest of the ingredients: egg, flour, silan and cinnamon, until it gains a consistent texture. If the mixture is too liquid, gradually add small amounts of flour until the mixture is firmer.
- Heat the oil in a pan and when the pan is heated, put a patty made of the sweet potato mixture into the pan. Fry each patty on each side until it is well browned.
- Drizzle some silan over each patty as garnish, or serve with sour cream.
