Orange Vegetable Antipasti
3 large sweet potatoes, cut into wedges
1 acorn squash, quartered
2 large onions, quartered
*Any other vegetable can be added. Recommendations include: zucchini, eggplant, cauliflower, bell peppers of any color, carrots and even whole cherry tomatoes
Place vegetables in a bowl pour the following ingredients over them:
1/4 cup sweet chili sauce
1/4 cup soy sauce
1/4 cup Kinneret Farm silan
2 tbsp olive oil
A generous amount of coarsely ground black pepper
Toss well with both hands, so that all vegetables are thoroughly coated with sauce.
Cover a baking pan with baking paper and lay out the vegetables evenly, preferably in a single layer.
Preheat oven to 200°C and bake for approximately 45 minutes. (Pierce vegetables with a fork to check if they are soft.)
