
A truly healthy salad. Crunchy, tasty, and nutritious, with multi-colored root vegetables and a deliciously complementary tahini-silan dressing. If you prepare this in advance, wait until just before serving to dress the salad.
Makes 6 servings.
Ingredients:
1/2 purple or white cabbage, cut into long thin strips.
8 radishes, thinly sliced
2 carrots, cut into thin strips using a vegetable peeler
1/2 basket of bean sprouts
2 scallion stalks, chopped
1/2 cup cilantro leaves, chopped
Dressing:
1/4 cup tahini
1/4 cup Kinneret Farm natural silan
1 tsp-1 tbsp hot chili sauce or a few drops of Tabasco sauce (depending how spicy you prefer)
2-3 tbsp water
Juice of 1 lemon
Preparation:
- Mix all of the dressing ingredients, taste and adjust seasonings. To better check the flavor, try the dressing on a slice of one of the vegetables.
- Combine all the salad ingredients in a bowl. Pour the dressing in and toss. Serve immediately. It will become less fresh and crunchy the longer is sits.
